The 2014 education calendar will kick off in beautiful Charleston, SC, on Tuesday, January 14 at the Carolina Yacht Club. We will have an exceptional six-hour CMI Workshop with a focus on Food & Beverage Management. Mike Holtzman, who is consistently one of the highest-rated and favorite speakers at CMAA World Conferences, will be our featured speaker. This Program will also feature a Chefs Panel including renowned club and restaurant chefs. This will be a wonderful beginning to our 2014 education calendar and a great opportunity to invite your culinary and food and beverage staff to attend.

Cost: Monday Cocktail Reception - $25; Tuesday Education Program - $30/member and $55/non-member (includes breakfast, lunch, breaks and education).

Accommodation Information
The DoubleTree by Hilton Hotel & Suites Charleston – Historic District will serve as the Chapter's host hotel for the weekend. The hotel is located at: 181 Church Street, Charleston, SC 29401.
 
The Chapter has a room block set up at a rate of $139/night plus taxes for Sunday, Monday, and Tuesday nights. To make your reservation, please call 877-408-8733 and ask for the "Carolinas Chapter CMAA" group rate. The room block was set to be released on Monday, December 23, 2013, but will be held open as availability allows.

Education Information
"The Steps Involved in Designing and Operating a Profitable Private Club F&B Operation" with Mike Holtzman, President, Profitable Food Facilities (Click here for Mike's bio.)
This program is geared toward managers of all levels and is appropriate for all members of your club team. In this program, attendees will:
• Look at how to engineer your club menu to create a much larger profit;
• Discover how to negotiate better prices with your purveyors;
• Apply the necessary systems and controls for better profitability;
• Discuss the design and equipment elements that are critical to the success of your club operation;
• Learn the steps on how to take a remodel or new clubhouse from initial design to opening day;
• Learn the eight advanced steps that can make a 15% difference to your bottom line;
• Discover some innovative ways to increase sales; and
• Understand how to properly market the food and beverage operation at your club.

"Chefs Panel" moderated by Greg Keating, CCM, PGA, Vice President of Club Operations, Daniel Island Club
Greg will lead this panel of successful executive chefs from both the private club and restaurant fields in
discussion on challenges in today's kitchen, training on both sides of the house, and the growing demand for local, healthy menus. Panelists for this conversation include:
• Olivier Andreini, Master Chef – Executive Chef, Country Club of Landfall in Wilmington, NC
• Sara Clow – General Manager, GrowFood Carolina in Charleston, SC
• Tyler Dudley, CEC – Executive Chef, Daniel Island Club in Charleston, SC
• Mike Lata – Chef/Partner, FIG Restaurant in Charleston, SC, and 2009 recipient of the "James Beard Best Chef: Southeast"

Optional Event Information
On Monday evening, make plans to join Chapter members and friends at the Harbour Club for cocktails and hors d'oeuvres before a free evening to explore the best dining that Charleston has to offer. (Click here for attire information.)

Attendees are in luck, as we will be in Charleston during their Restaurant Week, so the dining opportunities are endless and easily searchable. Idea Fair and Wine Auction Information
Be a part of CMAA's World Conference initiatives with some local participation. The Winter Education Program will serve as a pre-Conference platform in which to showcase your club's Idea Fair entry(ies). Entries will be on display at Monday's Program for Chapter members to view and will then be sent to CMAA National for inclusion in the Conference competition.

If you will not be in attendance at the Program, you are still able to participate; simply send your entry to arrive at Carolina Yacht Club before Monday, January 13. (See address within Host Club Information; Attn: Adam Gartside.)

Additionally, help contribute to the Chapter's Wine Auction donation by bringing a bottle of wine (or more!) with you to the Program. Please consider making a donation from your personal and/or club cellar and reaching out to vendors and friends to do the same. Wine must meet a minimum wholesale value of $25 per bottle.
