The DoubleTree by Hilton Hotel & Suites Charleston – Historic District will serve as the Chapter’s host hotel for the weekend. The hotel is located at: 181 Church Street, Charleston, SC 29401.
Program Information
Program attendees who attend all sessions will earn 1 Association
Activity Credit for the Chapter Business Meeting and 6 CMI Workshop
credits for the Food & Beverage Management education. Attire: Country Club Casual; jackets and ties not required.
"Food & Beverage Trends: Going Local” with Select Charleston Vendors
This session will take a look into the local food and beverage business in Charleston, with select vendors sharing their industry passion and insights and attendees enjoying a “Charleston Market” experience. Participating vendors will be announced here when and as secured!
In addition to attendees enjoying some wine tastings over lunch, Jim, Mira Wine owner, and Gustavo, Mira Wine winemaker, will share their story of the winemaking process and speak to the relationship between winemaker and owner.
“Customer Service: New Realities in Today’s Environment” with Ken Batali, Batali Associates
This entertaining, informative and interactive session will cover the importance of service in growing and evolving your business. With a background ranging from quick-serve to fine-dining, Ken’s ability to relate to all aspects of the hospitality business will provide a unique insight into the value of service as a key growth tactic.
“Foodservice Trends: Staying Current as the Industry Evolves” with Ken Batali, Batali Associates
As club managers, you deal with a continuously changing landscape of menus, diets, flavors and dining styles. Separating fads from facts can be challenging and confusing. During this session, attendees will share and explore the impact that these changes can have on your club, and discuss ways to appropriately evolve in order to maximize member satisfaction.
Ken Batali, President of Batali Associates, has spent more than 35 years in the restaurant industry. During his career, Ken has contributed to the success of numerous organizations. As the Senior Operations Executive at Restaurants Unlimited, he led a diverse group of high-end, full-service restaurants to peak performance levels of service and profitability. At Taco Del Mar, a quick-serve franchise organization, Ken created the training programs and quality-control systems. Since founding Batali Associates in 2002, he has consulted with a broad range of foodservice businesses, including independent restaurants, private clubs, hotels, and multi-unit chains.
Optional Event Information
On Sunday evening, make plans to join Chapter members and friends at the Carolina Yacht Club for a cocktail networking reception before a free evening to explore the best dining that Charleston has to offer. Attendees are in luck, as we will be in Charleston during their Restaurant Week, so the dining opportunities are endless and easily searchable. If you have any dining questions, Brian Boss, CCM, and Ian Campbell, both at Yeamans Hall Club in Charleston, have offered their local assistance. Optional Wine Auction Donation Information
Be a part of CMAA’s World Conference initiatives with some local participation. The Winter Education Program will serve as a pre-Conference platform to contribute to the Chapter’s Wine Auction donation by bringing a bottle of wine (or more!) with you to the Program.
