Program Speaker:
Clifton Vogelsberg serves as Center of Plate Specialist at US Foods since October of 2013, where he consults with and instructs sales and restaurant operators.
During his lengthy Culinary career, Vogelsberg combined contemporary and traditional techniques in all of his dishes, emphasizing a fresh, local, and seasonal product while relying on his extensive and varied educational and culinary backgrounds. Recently Vogelsberg was Executive Chef of one of Raleigh’s most established restaurants, Winston’s Grille for 2 1/2 years. Prior to that he was Executive Chef of the chique Solas Dine Lounge and Roof for 3 years and was Executive Chef at Sullivan’s Steakhouse from 2002 until 2007. Vogelsberg has earned degrees from the Culinary Institute of America in Hyde Park, N.Y. (1999), and North Carolina State University in Raleigh (1993).
He and his wife of 20 years, Holly, have two lovely daughters: Carson, 16, and Maslan, 13. Vogelsberg enjoys mountain biking, running, surfing and fishing.
Program Summary:
Our esteemed Chef will be explaining the Food Safety (danger zones, storage temperatures, storage procedures, etc.) as it relates from the perspective at the Distribution Center, before it ever gets to the door of the operator, and what is needed on the Customer’s side to ensure the chain of custody is met from both parties.
